I made you a Valentine.

It’s just the sort of valentine every Valentine should get.

It’s heart-shaped. It’s chocolate.
A cocoa-peppermint wafer cookie, with a bite of peppermint buttercream, all covered in milk chocolate, to be exact.

There was just one problem.

My hunky valentine got a hold of them before I could take pretty photos. He gobbled the lot of them up.

VALENTINE PEPPERMINT CREME COOKIES

Valentine Peppermint Creme Cookies

I find chocolate and peppermint the ultimate, crave-worthy combination. If I could eat Girl Scout Thin Mint cookies every morning with a bowl of oatmeal, I would. If I could eat a mint brownie for dinner every night, I would. If I could sleep in a bucket of Junior Mints, I would. If I could build a swimming pool of….oh heck, you get the idea. These little cookies I conjured take the chocolate/peppermint flavor combination to a whole new level. A crisp cocoa-peppermint wafer cookie, topped with a heaping mound of buttermint fondant, sealed together with a milk chocolate kiss. Except for the part where you’ll never want any other sort of cookie, thereby leaving Girl Scouts everywhere without a job, this truly is the ultimate Valentines day treat. Happy Love.

Cocoa Wafer Cookies

3 T. butter

1 egg white
1/4 c. brown sugar
pinch of Baking Soda
1/2 tsp. salt
1/4 c. cocoa powder
1/2 c. flour (plus 1/4 c.)
2 drops pure peppermint oil
Combine all ingredients together. Add flour as needed, until dough is roll-able and not sticky at all. Roll verrrry thin. Cut into desired shapes. Bake at 325 for 4-7 minutes, or until cookies have firmed and browned slightly around edges. Remove from oven and cool.

Peppermint Buttercream Layer

2 c. powdered sugar

4 T. melted butter
2-3 drops pure peppermint oil
1/2 tsp. heavy whipping cream

Mix together until it becomes thick and easy to roll with a rolling pin. Roll until about 1/4″ thick. Cut into desired shape. Place atop cooled cookies. Place cookies into melted chocolate CANDIQUIK, spoon chocolate atop until fully covered. Allow to dry on a piece of parchment paper. Makes about 30 cookies.
