Cheesy Loaded Meatloaf Casserole

If you consider yourself to be a meatloaf fan then you’re going to love this meatloaf casserole. It takes everything you love about classic meatloaf and adds casserole ingredients to change it into something deliciously different. If you have leftover mashed potatoes that’s even better because you don’t have to cook them especially to make this recipe. There are other recipes with leftover mashed potatoes of course but this has to be one of the tastiest.

Along with the beef and mashed potatoes, you’re going to need garlic, Worcestershire sauce and brown sugar for flavor, plus cheese, bacon and more. It’s a hearty, filling dish which is ideal for any meal – lunch, dinner or a late supper if that’s your thing. It will keep for a few days too so you could enjoy it for dinner and then again for lunch the next day. You aren’t going to get tired of this special meatloaf casserole anytime soon!

When it comes to casseroles, they’re all pretty good. But this meatloaf casserole is in a league of its own. The flavor is meaty and cheese and the addition of leftover mashed potatoes makes it a breeze to prepare.

How to Serve It:

Serve this meatloaf casserole recipe hot, perhaps with salad on the side.

Ingredients:

  • Mashed potatoes
  • Worcestershire sauce
  • Onion
  • Egg
  • Bacon (or “Bacon Bits”)
  • Minced garlic cloves
  • Lean ground beef
  • Brown sugar
  • Italian breadcrumbs
  • Shredded sharp cheddar cheese
  • Salt and black pepper, to taste

How to make Cheesy Loaded Meatloaf Casserole:

Preheat the oven to 400ºF.

Mix the beef with the garlic, onion and Worcester sauce with your hands or a couple of forks.

Add salt and black pepper then mix in the egg and breadcrumbs.

Press the mixture into an 8-inch square baking pan.

Spread the mashed potatoes on top.

Sprinkle the cheese and bacon on top of that.

Cover with foil and bake for 30 minutes.

Discard the foil and bake for 10 more minutes or until the cheese melts and bubbles.

Serve hot.

  • 1½ cups shredded sharp cheddar cheese
  • Salt and black pepper to taste

Method

Can You Make It Ahead?

You can prepare it ahead and keep it in the fridge until cooking.

Storage Instructions:

Leftovers will be fine for up to 3 days in a covered container (or the dish you cooked it in covered with foil) in the refrigerator.

Variations and Substitutions:

Use leftover mashed potatoes to save time. You can mash some minced or dried garlic into them for added flavor.
