Apple Cheesecake Bars

What you need to make these Apple Cheesecake Bars:

4 Pink Lady Or Apples Of Your Choice (Peeled, Cored And Finely Chopped)

2 (8 Oz) Packages Cream Cheese (Softened)

1/4 Teaspoon Nutmeg

3 Sticks Butter (Softened And Divided)

1/2 teaspoon Ground Cinnamon

2 Large Eggs

1/2 cup plus 2 Tablespoons Divided Sugar

1 1/2 cups Brown Sugar

3 cups All-Purpose Flour

1/2 cup Quick Cooking Oats

1/2 cup Pecan Chips

How to make these Apple Cheesecake Bars:

Step 1. Preheat oven to 350 °F.

Step 2. In a medium bowl, combine 2 cups flour and 1/2 cup brown sugar.

Step 3. Cut in 2 sticks butter with a pastry blender/spoon or whisk, until mixture is crumbly.

Step 4. Press evenly into a 13-by-9-by-2 inch baking pan lined with parchment paper.

Step 5. Bake 15 minutes or until lightly browned.

Filling:

Step 1. In a large bowl, beat cream cheese with 1/2 cup sugar in an electric mixer at medium speed until smooth. Then add eggs. Stir to combine. Pour over warm crust.

Step 2. In a small bowl, stir together chopped apples, remaining 2 tablespoons sugar, cinnamon, and nutmeg. Spoon evenly over cream cheese mixture.

Step 3. Sprinkle evenly with Topping. Bake 30 minutes, or until filling is set. Let the Apple Cream cheese Bar’s cool to room temperature before cutting.

Step 4. Lift the bars by the excess parchment paper and cut.

Topping:

Step 5. In a small bowl, combine 1 cup brown sugar, 1 cup all-purpose flour, 1/2 cup oats, pecan chips, and 1 stick of softened butter.
