It’s bread baking season!
Try this amazing Zucchini Bread made with applesauce for a moist loaf every time.
Serving Size– Makes one large or two small loaves
Ingredients
1 ½ cups all-purpose flour
½ tsp salt
½ tsp baking soda
2 tsp cinnamon
2 cups grated zucchini
2 eggs
¼ cup apple sauce
¼ cup vegetable oil
1 cup sugar
2 tsp vanilla extract
½ cup chopped pecans (optional)
Instructions
Step 1: Preheat your oven to 350 degrees and prepare 1-2 loaf pans with nonstick spray (this recipe can make one large or two small loaves)
Step 2: In the bowl of a stand mixer, beat all wet ingredients until combined
Step 3: Place a sifter over the bowl, and add in your dry ingredients and sift into the wet mixture. Mix until combined
Step 4: Add in the zucchini and pecans and mix until they are incorporated
Step 5: Add into your prepared pans, and bake for 45-50 minutes or until a skewer comes out clean. Let cool in the pan for about 10 minutes, and then remove to a wire rack to cool completely.
Serve warm with a slice of melted butter or just as is and enjoy the seasonal flavors.
