Mexican Zucchini and Beef

Ingredients
  

  • 1 ½ lbs. Ground beef
  • 2 Small zucchini chopped
  • 1 Can Rotel
  • 3 tsp. Minced garlic
  • 1 Tbsp. Chili powder
  • 1 tsp. Cumin
  • ½ tsp. Paprika
  • ½ tsp. Oregano
  • Salt and pepper to taste

Instructions
 

  • Cook the beef in a skillet over medium high heat until it is browned completely.
  • Add in the minced garlic, stir, and cook for an additional 30 seconds.
  • Reduce the heat to medium low and add in the chili powder, cumin, paprika, oregano and salt and pepper to taste. Stir to combine.
  • Pour the Rotel into the skillet, stir, and cover. Cook for 10 minutes.
  • Add the zucchini to the skillet, cover and cook for an additional 10 minutes before serving.
