For the cake:
- 2 ⅔ C. Almond flour
- 3 tsp. Baking powder
- Pinch of salt
- ½ C. Swerve confectioners sugar substitute
- 8 Tbsp. Butter unsalted
- 3 Large eggs
- 1 tsp. Vanilla extract
- ½ tsp. Almond extract
- ½ C. Heavy whipping cream
For the cream cheese filling:
- 8 oz. Cream cheese softened
- ⅓ C. Swerve confectioners sugar substitute
- 1 tsp. Vanilla extract
- 1 Large egg
- 1 C. Fresh raspberries
Preheat the oven to 325 degrees.
In a mixing bowl, combine the ingredients for the cake batter, and beat on high until smooth.
Reserve ⅓ of the batter to the side, and place the rest in an even layer in the bottom of a 9x9 baking dish that has been well greased.
Mix the ingredients for the cream cheese filling on high until smooth and creamy.
Sprinkle the raspberries over the cake batter in the baking dish.
Add a layer of the cream cheese filling to the top of the batter and raspberries.
