Greek Salad with Pepperoni

This Greek Salad with Pepperoni is a perfect addition to any meal. It can be served as a side dish or served in larger portions as a dinner salad. It will have all your greens, fats, and proteins in it to complete a meal.

- 2 c Salad greens
- 8 Pepperoni slices chopped
- 5 Green olives chopped
- 1 oz Crumbled feta cheese
- 1 tbsp Chopped tomatoes
- 3 tbsp Sliced or chopped cucumbers
- ¼ c Sliced red bell pepper
For the Dressing:
- 1 tbsp White wine vinegar
- ½ tsp Oregano
- ½ tsp Thyme
- ¼ tsp Salt
- Pepper to taste
- 2 tsp Olive oil
- 1-2 tsp Fresh lemon juice
Place 2 cups of salad greens into a large bowl.
Top the salad greens with the chopped pepperoni, green olives, crumbled feta, cucumber, tomatoes and red bell pepper.
In a small bowl, add the white wine vinegar, oregano, thyme, salt, pepper, olive oil and fresh lemon juice. Whisk to combine well.
Pour the dressing mixture over the salad and serve immediately.
