Keto Avocado Toast

This Keto Avocado Toast uses 90-second bread for an easy, filling, and nutritious breakfast you can whip together in 10 minutes or less!

Ingredients
  

  • 3 Eggs divided
  • 1 tbsp Butter melted
  • ½ tsp Baking powder
  • 3 tbsp Almond flour
  • ½ tsp Psyllium husk powder
  • 1 Ripe avocado
  • Salt and pepper to taste
  • 1 tbsp Olive oil

Instructions
 

  • Place 1 of the eggs, 1 tbsp of butter, baking powder, almond flour, psyllium husk powder and a pinch of salt into a small square shaped microwave safe container. Stir until well combined. Place the mixture into the microwave for 90 seconds. Remove, slice in half, and set aside.
  • Empty the inside of an avocado into a small bowl, and mash it with the back of the tines of the fork. Add salt and pepper to taste.
  • Heat 1 tbsp of olive oil in a skillet over medium-high heat. Lightly drop two eggs into the skillet, and fry them to your liking. Remove, and top with salt and pepper to taste.
  • In the same skillet, place the two slices of bread you previously made face down. Fry them until the outside is crispy, and then remove.
  • Top each slice of bread with half of the mashed avocado, and then with one of the fried eggs. Serve immediately.
