Keto Cauliflower Mac and Cheese

Keto Cauliflower Mac and Cheese is the perfect easy, cheesy side dish to dinner any night of the week. Kid-approved too!

Ingredients
  

  • 1 Large head of cauliflower
  • 1 c. Heavy whipping cream
  • 3 oz. Cream cheese
  • 1 tsp. Onion powder
  • 1 tsp. Garlic powder
  • 1 c. Cheddar cheese
  • ½ c. Mozzarella cheese
  • ¼ c. Parmesan cheese
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 375 degrees.
  • Cut the head of cauliflower into florets, and steam or boil until they are a crisp tender. This process will take about 5 minutes.
  • Strain the cauliflower completely, and place it into a greased baking dish. Add salt and pepper to taste.
  • In a skillet over medium-high heat add 1 cup of heavy whipping cream, and bring it to a low simmering boil.
  • Whisk in the garlic powder, onion powder and salt and pepper to taste.
  • Add in 3 ounces of cream cheese. Stir until it is completely incorporated and smooth.
  • Stir in 1 cup of cheddar cheese.
  • Sprinkle in ½ cup of mozzarella cheese. Stir the cheese sauce until it thickens and is smooth.
  • Pour the cheese sauce over top of the cauliflower in the baking dish. Stir to coat the cauliflower well.
  • Sprinkle ¼ cup of Parmesan cheese on top of the cauliflower.
  • Bake the cauliflower for 15-20 minutes or until the mixture is browned on top and bubbly. You can turn the broiler on for the last few minutes if you want a more browned appearance on the top of your mac and cheese.
