German potato pancakes

German potato pancakes combine the best of both worlds: crunchy on the outside, and soft and creamy on the inside. The combination of these textures creates an irresistible dish that's sure to please everyone at your dinner table.

Ingredients
  

  • 2 Large eggs
  • 2 ½ lbs. Russet potatoes peeled and grated well
  • 1 tsp. Salt
  • Onion grated well
  • ¼ C. Flour
  • Oil for frying

Instructions
 

  • Place the grated potatoes into a flour sack towel, and wring out as well as you can to remove as much water as possible.
  • Mix together the onion, eggs, salt, flour and potatoes in a bowl until well combined.
  • Heat a layer of oil in a skillet over medium high heat, and drop the mixture by the ½ cup into the heated oil.
  • Fry evenly on both sides until browned and crispy.
  • Drain on a paper towel lined plate before serving.
