Season pork chops with salt and pepper to taste.
In a large skillet, add the olive oil and butter over medium to high heat.
Stir to combine until butter is melted.
Place the pork in the skillet and sear for 5 minutes on each side, or until golden brown. Place the pork on a plate to the side.
In the large add a tablespoon of butter, and stir until melted.
Add the sliced onions to the skillet and season with salt and pepper to taste.
Stir the onions often until the onions are cooked tender and have a light caramelization. Add the minced garlic and thyme and toss to combine.
Pour the broth into the onion mixture and stir to combine.
Begin to add the heavy cream and stir until the cream is fully incorporated.
Place the pork chops back into the skillet.
Cook for 5-7 minutes while randomly topping each chop with the onion mixture. Garnish with parsley and enjoy
