- 2 pounds Sirloin Steak sliced into chunks
- 1 medium Onion diced
- 2 cups Baby Carrots
- 3 Celery Ribs sliced
- 1 cup mushrooms sliced
- 3 Russet potatoes
- 2 tbsp. Olive Oil
- 1 tbsp. Minced Garlic
- 3 tbsp. Flour
- 1 ⁄4 cup Tomato paste
- 1 ⁄2 cup Marsala wine
- 2 1 ⁄2 cups Beef Stock
- 3-4 Bay leaves
- 1 tbsp. Ancho chili spice
- 1 tbsp. Smoked paprika
- 1 tbsp. Cajun Spice
- Salt and Pepper to taste
In a large dutch oven add the olive oil over medium heat.
Season the steak with salt and pepper.
Add the steak to the dutch oven and cook over medium heat until browned on all sides. Add the onion, celery, and carrots and cook until tender.
Add the garlic, and potatoes and toss to combine, continue to cook over medium heat. Make sure to continue to stir the ingredients to avoid burning.
Add the flour, and tomato paste over the steak mixture and toss to combine.
Add the marsala wine, beef stock, bay leaves, and other spices.
Toss to combine.
Bring the stew to a boil and then reduce the heat to medium and cook for 1 hour. Enjoy!
