Ingredients
  

  • 1 lb Extra Lean Beef 80 / 20
  • 1 tbsp. Garlic Minced
  • 1 lg Purple Onion Diced
  • 1 15 oz Can Of Corn Drained
  • 1 15 oz Can Black Beans Drained
  • 1 Can Of Fat Free Mushroom Soup
  • 2 cups Colby Cheddar Shredded
  • ½ cup Skim Milk
  • ¼ cup Fat Free Sour Cream
  • 1 30 oz Bag Of Frozen Tater Tots

Instructions
 

  • Preheat oven to 350’ degrees.
  • Coat a 9x13 casserole dish with non-stick baking spray.
  • In a large skillet add the diced onion, beef, and garlic. Stir to combine.
  • Cook for 5-6 minutes over medium heat. Drain the fat.
  • In a small bowl add the soup, milk, and sour cream, mix to combine.
  • Pour the soup over the meat mixture, to mix to combine. Add the corn, and black beans to the meat mixture, stir to combine.
  • Place a layer of tater tots on the bottom of the casserole dish.
  • Top the tater tots with ½ of the meat mixture. Spread the meat mixture evenly over the tater tots.
  • Top with ½ of the shredded cheese. Repeat the steps.
  • Bake in the oven for 30 - 35 minutes. Remove from the oven and allow to cool.
