Ingredients
  

  • 1 ½ lbs.Baby Red Potatoes Cut In Half
  • ½ lbs. Baby Golden Potatoes Cut In Half
  • tbsp Olive Oil
  • ½ tsp Garlic 1 Tsp Dried Thyme Minced
  • ½ tsp Oregano Dried
  • ½ tsp Basil Dried
  • cups Parmesan Shredded
  • Kosher Salt/ Black Pepper To Taste
  • tbsp Unsalted Butter
  • 2 tbsp Fresh Parsley Leaves Chopped

Instructions
 

  • Preheat oven to 400 degrees.
  • Line a baking sheet with nonstick baking spray. Chop both baby red and golden potatoes in half. Set aside.
  • Add the red and golden potatoes in a large bowl.
  • Drizzle olive oil, garlic, thyme,oregano, basil and parmesan over the potatoes.
  • Season with salt and pepper. Toss.
  • Transfer the potatoes onto the prepared baking sheet. Arrange the potatoes in a single layer with the skin side up. Bake at 400 degrees for 15 minutes.
  • Remove from the oven and flip the potatoes so that the skin side is facing down.
  • Return the potatoes to the oven at 400 degrees for an additional 15 minutes.
