- 1 ½ cups all-purpose flour
- ½ tsp salt
- ½ tsp baking soda
- 2 tsp cinnamon
- 2 cups grated zucchini
- 2 eggs
- ¼ cup apple sauce
- ¼ cup vegetable oil
- 1 cup sugar
- 2 tsp vanilla extract
- ½ cup chopped pecans optional
Preheat your oven to 350 degrees and prepare 1-2 loaf pans with nonstick spray (this recipe can make one large or two small loaves)
In the bowl of a stand mixer, beat all wet ingredients until combined
Place a sifter over the bowl, and add in your dry ingredients and sift into the wet mixture. Mix until combined
Add in the zucchini and pecans and mix until they are incorporated
Add into your prepared pans, and bake for 45-50 minutes or until a skewer comes out clean. Let cool in the pan about 10 minutes, and then remove to a wire rack to cool completely.
