Ingredients
  

  • 1 ½ cups all-purpose flour
  • ½ tsp salt
  • ½ tsp baking soda
  • 2 tsp cinnamon
  • 2 cups grated zucchini
  • 2 eggs
  • ¼ cup apple sauce
  • ¼ cup vegetable oil
  • 1 cup sugar
  • 2 tsp vanilla extract
  • ½ cup chopped pecans optional

Instructions
 

  • Preheat your oven to 350 degrees and prepare 1-2 loaf pans with nonstick spray (this recipe can make one large or two small loaves)
  • In the bowl of a stand mixer, beat all wet ingredients until combined
  • Place a sifter over the bowl, and add in your dry ingredients and sift into the wet mixture. Mix until combined
  • Add in the zucchini and pecans and mix until they are incorporated
  • Add into your prepared pans, and bake for 45-50 minutes or until a skewer comes out clean. Let cool in the pan about 10 minutes, and then remove to a wire rack to cool completely.
