Apple Blueberry Donuts

Ingredients
  

  • 1 ½ cup Flour
  • 1 ½ tsp Baking powder
  • ½ tsp. baking soda
  • ¾ cup Light brown sugar packed
  • 2 Large eggs
  • ¾ cup Buttermilk
  • 3 tbsp Unsalted butter Melted
  • 1 cup Pureed Blueberries 1 cup fresh blueberries
  • 1 tsp Pure vanilla extract
  • 1 tsp Apple pie spice
  • 1 Disposable piping bag
  • 12 tbsp unsalted butter Softened
  • cup Sugar
  • 1 ½ cup Flour
  • 1 cup Powdered Sugar
  • 2-3 tbsp whole milk
  • 2 tsp vanilla extract

Instructions
 

  • Preheat oven to 350 degrees and spay a doughnut pan with pam baking spray.
  • Using a food processor or blender, puree the 1 C of blueberries and set aside.
  • Using a medium bowl, whisk together the flour, baking powder, bakingsoda, and apple pie spice.
  • Using a large bowl, whisk together the eggs, sugar, buttermilk, melted butter and vanilla.
  • Gradually whisk in the dry ingredients into the wet until combined.
  • Fold in the pureed blueberries.
  • Scoop the batter into the piping bag.
  • Fill the doughnut cavity with the batter.
  • Bake in the oven for 11-13 minutes or until a light golden brown.
  • Remove from oven and allow to cool.
  • Remove the doughnuts from the pan and place onto a wire rack.
  • Combine all ingredients into a medium bowl.
  • Using your finger, work the mixture into a coarse like crumble. Set aside
  • Using a medium bowl, whisk all ingredients until combined.
  • Dip the top of the doughnut into the glaze and place onto the wire rack.
  • Sprinkle some streusel on top. Enjoy!
