In a food processor or blender add your oats , blend until fine.
Add the walnuts to your oats and pulse 4-5 seconds.
In a medium bowl add the ground oats, flour, baking soda, salt, and cinnamon.
Stir to combine.
In a second medium sized bowl add the butter, sugars, vanilla, and lemon juice.
Cream to combine.
Add your eggs into a small bowl.
Use an electric mixer, mix until smooth.
Stir the dry mixture into the wet mixture and blend well.
Add the chocolate chips to the dough and mix.
Chill the dough in the refrigerator over night.
Using a regular sized ice cream scoop place your cookie scoops onto an parchment covered cookie sheet.
Make sure to place the scoops about 2 inches apart.
Bake in a 350°F oven.
Bake for 12-15 minutes.
