Sweet Potato is one of the main ingredients we use in our holiday cooking. So why not try something new this year?
Give your baked sweet potato an upgrade with this Sweet Potato Casserole.
A perfect combination of sweet and savory with a sweet potato base topped with a sweet streusel crumble on top.
Perfect for the holidays to change up your traditional menu and really bring that WOW factor to all your guests.
Ingredients:
6 medium-sized sweet potatoes (approximately 4lb)
½ cup heavy cream
2 eggs
½ cup brown sugar, or to taste
1 teaspoon vanilla extract
2 teaspoons cinnamon
1 teaspoon salt
½ teaspoon nutmeg
Streusel Topping:
4 Tablespoons butter, softened
½ cup flour
¼ cup brown sugar
2 teaspoons cinnamon
1 teaspoon salt, optional
½ teaspoon nutmeg
½ cup chopped pecans
Instructions:
Step 1: Peel and coarsely chop your sweet potatoes.
Step 2: Place in a large stockpot and cover with water.
Step 3; Bring the pot to a boil, then simmer for 10-15 minutes until fork tender.
Step 4: Drain the water off the potatoes, then add in the heavy cream, eggs, brown sugar, vanilla extract, cinnamon, salt, and nutmeg.
Step 5: Beat with an electric mixer until completely combined.
Step 6: Preheat oven to 350F Grease a 9” x 13” casserole dish and pour the sweet potato mixture into the dish.
Step 7: In a small bowl, combine the streusel topping ingredients and then scatter over the sweet potato mixture.
Step 8: Bake for 45 minutes, until topping is browned and crisped.
This recipe can be served as a side dish, appetizer, or main dish. It is very versatile to fit all your serving needs!
