Do you love snowballs but hate all the artificial ingredients that come with them?
These Pumpkin Spice Snowballs are chewy and perfectly sweetened.
Ingredients
1 C unsalted butter, softened
1 C powdered sugar
1 tsp pure vanilla extract
2 ¼ C flour
½ tsp kosher salt
1 ½ tsp ground cinnamon
½ tsp ground nutmeg
½ tsp ground ginger
¼ tsp allspice
Cinnamon Coating
1 C powdered sugar
2 tbsp ground cinnamon
Instructions
Step 1: Preheat oven to 350 degrees and line 2 cookie sheets with parchment paper
Step 2: Using a large bowl, whisk together the flour, salt, ground cinnamon, nutmeg, ginger, and allspice
Step 3: Using a hand mixer, beat the butter and powdered sugar, and vanilla until combined and fluffy
Step 4: Gradually mix in the dry ingredients until a dough forms
Step 5: Using a tablespoon, scoop some dough into the palm of your hand and roll into a ball
Step 6: Place onto the cookie sheet. Repeat until all the dough has been rolled into a ball
Step 7: Bake in the oven for 8-9 minutes or until slightly brown
Step 8: Remove from oven and allow to cool for 5 minutes
Step 9: In a medium bowl, whisk together 1 C powdered sugar and 2 tbsp ground cinnamon
Step 10: Working with one cookie at a time, roll the cookie into the powdered sugar
Step 11: Place onto a wire rack. Repeat steps with remaining cookies
Step 12: Once all cookies have been rolled in the sugar, repeat again for a nice coating of powdered sugar
