Chocolate Espresso Banana Bread just sounds delicious doesn’t it? It’s a new twist to your traditional Banana Bread but it’s just so yummy. Have a slice right from the oven and it will melt in your mouth.
Ingredients:
3 medium bananas, mashed
½ C unsalted sweet cream butter, melted
¾ C light brown sugar, packed
2 tsp espresso
2 large eggs
1 tsp pure vanilla extract
1 ¼ C flour
½ C Dark cocoa powder
1 tsp baking soda
½ tsp baking powder
½ tsp kosher sat
1 C chocolate chips plus ¼ C chocolate chips to sprinkle on top
½ C espresso chips
1 9×9 loaf pan
Directions:
Step One: Preheat oven to 350 degrees and spray the loaf pan with pam baking spray.
Step Two: Using a large bowl, beat together the mashed bananas, butter, brown sugar, and espresso powder until combined.
Step Three: Beat in the eggs and vanilla until combined.
Step Four: Using another large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt until combined.
Step Five: Gradually beat in the dry ingredients until combined.
Step Six: Fold in the 1 C of chocolate chips and ½ C of espresso chips.
Step Seven: Pour batter into the loaf pan.
Step Eight: Sprinkle the chocolate chips on top of the batter.
Step Nine: Bake for 50-65 minutes or until a toothpick comes out clean.
Step Ten: Allow to cool completely before removing from the pan and place onto a wire rack.
Chocolate Ganache:
½ C chocolate chips
¼ C heavy whipping cream
1 disposable piping bag
Directions:
Step One: Using a small pot, bring the heavy whipping cream to a simmer.
Step Two: Pour over the chocolate chips and whisk until smooth.
Step Three: Scoop the ganache into the piping bag and cut the tip off.
Step Four: Drizzle over the loaf and allow it to sit for 10 minutes before serving!
